Carob pods, which grow on the Ceratonia siliqua tree, can be distinguished between ripe and unripe ones by examining several key characteristics. Ripe carob pods are typically dark brown to black in color, and they have a glossy, smooth surface. They often appear plump and have a slight bend, as the seeds inside have developed fully. When shaken, ripe pods will yield a rattling sound, indicating the presence of fully formed seeds.

In contrast, unripe carob pods are green or light brown, have a firmer and less pliable texture, and display a rough, matte surface. Their seeds are undeveloped and do not rattle when shaken. Additionally, unripe pods tend to have a less sweet flavor and a more fibrous texture. The harvesting of carob pods typically occurs in late summer to early autumn, at which point they can be easily identified for optimal ripeness.
