What are the key ingredients in traditional Trempo?

Traditional Trempó (trampó) is a Mallorcan chopped salad made from just a few peak-summer vegetables. The core ingredients are ripe tomatoes, green peppers—ideally the island’s mild, long green “pebre verd” rather than spicy chiles—and white or sweet onion. These are finely diced so the tomato juices mix with the other vegetables. The dressing is simply extra-virgin olive oil and sea salt; in the most traditional version no vinegar is used, though some households add a small splash. Black pepper, garlic, olives, or tuna are modern additions but are not part of the orthodox recipe. Because the salad is so minimal, the quality and ripeness of the tomatoes and peppers are crucial. The same mixture is also used as the topping for coca de trempó, a Mallorcan flatbread.
